Left Over Mashed Potato and Leek Soup Recipe

This is the perfect recipe for when you have left over mashed potato!! Or you can chop up 2 large potatoes into small cubes and add them. You will need to boil the stock for longer until the potato is nice and soft, you need to be able to smoosh it against the side of the pan.
