The Story about the recipe

When we were living in Canada we had a local restaurant called Swiss Chalet.. it was amazing - they served home cooked food which was amazing when it was -20c outside and you just wanted something warm and comforting!!

I don't really have a sweet tooth but my other have does. They had a good selection of pies and puddings on offer. After each meal at SC my other half would end the meal with a nice big wedge of Coconut cream pie.

The ladies in all of the restaurant (and guys) but it was mainly ladies in the kitchen all seemed to have worked there for years and were so friendly. I used to pick up tips and tricks for ingredients.

This recipe has been tweaked and tweaked over the last 3 years and it is other half approved lol.. this is the closest thing we have had since the Swiss Chalet pie- even i like it.
